Ingredients
  

For the filling:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 medium potatoes, peeled and diced
  • 1/2 cup frozen peas
  • 2 tbsp vegetable oil
  • 2 tbsp chopped fresh cilantro (optional)

For the pastry:

  • 2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 1/2 cup water

Instructions
 

For the filling:

  • In a large skillet, heat the vegetable oil over medium-high heat. Add the onions and cook until they are translucent.
  • Add the garlic, ginger, cumin, coriander, turmeric, chili powder, salt, and black pepper to the skillet. Stir until the spices are fragrant.
  • Add the diced chicken to the skillet and cook until browned on all sides.
  • Add the diced potatoes and frozen peas to the skillet. Stir to combine and cook until the potatoes are tender.
  • Remove the skillet from the heat and stir in the chopped cilantro (if using).

For the pastry:

  • In a large mixing bowl, whisk together the flour and salt.
  • Add the vegetable oil to the bowl and use your hands to rub it into the flour until the mixture is crumbly.
  • Gradually add the water to the bowl, mixing with your hands, until the mixture forms a smooth, pliable dough.
  • Knead the dough on a floured surface for a few minutes until it is smooth and elastic.
